Our favorite, crowd pleasing appetizer for fresh wild turkey.
Equipment
- 15-20 Toothpicks
- 1 Small mixing bowl
- 1 Baking dish
Ingredients
- 16 ounces applewood smoked bacon
- 4 pound fresh wild turkey breast
- 1 cup light brown sugar
- 1 tbsp pepper to taste
- 1 tbsp cayenne pepper to taste
- 1/2 cup honey
Instructions
- Pre-heat oven to 350°
- Slice bacon in half lengthwise and place on a baking sheet. Bake for 12 minutes and drain on paper towels.
- Cut the fresh wild turkey breast into bite sized pieces
- Place brown sugar, pepper, and cayenne pepper into a mixing bowl. Stir to thoroughly combine.
- Dredge each turkey chunk in the sugar/pepper mixture. Wrap with a par-cooked bacon slice, and secure with a toothpick. Place the bites on a baking sheet.
- Bake for 15-20 minutes or until bacon is crispy and the turkey is cooked to (135℉).
- Remove from the oven and coat all pieces generously with honey. Bake for five more minutes or until the turkey reaches (160℉). Remove from oven and drizzle with just bit more honey.
- Drink a toast to the hunt and enjoy this delicious appetizer with your crew!
