Turkey Hot Bites

Our favorite, crowd pleasing appetizer for fresh wild turkey.

Equipment

  • 15-20 Toothpicks
  • 1 Small mixing bowl
  • 1 Baking dish

Ingredients
  

  • 16 ounces applewood smoked bacon
  • 4 pound fresh wild turkey breast
  • 1 cup light brown sugar
  • 1 tbsp pepper to taste
  • 1 tbsp cayenne pepper to taste
  • 1/2 cup honey

Instructions
 

  • Pre-heat oven to 350°
  • Slice bacon in half lengthwise and place on a baking sheet. Bake for 12 minutes and drain on paper towels.
  • Cut the fresh wild turkey breast into bite sized pieces
  • Place brown sugar, pepper, and cayenne pepper into a mixing bowl.  Stir to thoroughly combine.
  • Dredge each turkey chunk in the sugar/pepper mixture.  Wrap with a par-cooked bacon slice, and secure with a toothpick.  Place the bites on a baking sheet.
  • Bake for 15-20 minutes or until bacon is crispy and the turkey is cooked to (135℉).
  • Remove from the oven and coat all pieces generously with honey.  Bake for five more minutes or until the turkey reaches (160℉).  Remove from oven and drizzle with just bit more honey.
  • Drink a toast to the hunt and enjoy this delicious appetizer with your crew!
