Venison kielbasa cooked with sauerkraut and apple served over homemade mashed potatoes

Venison Kielbasa and Sauerkraut

This is a hearty dish that's simple and delicious.

Ingredients
  

  • 1-2 tbsp olive oil
  • 16 ounces venison kielbasa, sliced on the bias, 1/2" thick
  • 2 whole sliced apples
  • 12 ounces sauerkraut
  • ¼ tsp caraway seeds
  • 4-5 medium gold potatoes, peeled and diced medium
  • ¼ cup heavy cream or milk
  • ¼ cup cream cheese
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp flat leaf parsley, minced (optional)

Instructions
 

  • Place a large skillet over medium heat.  Once warm, add some olive oil and sauté the kielbasa for 5 minutes.
  • Add the apples to the skillet and cook for 5 minutes
  • Drain the sauerkraut. Add the sauerkraut and caraway seeds and stir to incorporate. Reduce heat to low, cover, and cook for 20 minutes.
  • Simmer the potatoes in lightly salted water for about 20 minutes until fork tender.  Drain and return to pot.
  • Add butter, heavy cream or milk, cream cheese, salt and pepper, and mash to desired consistency.
  • Spoon kielbasa and sauerkraut mixture over a portion of mashed potatoes and sprinkle with some parsley for garnish if desired.

Notes

Make mashed potatoes according to your preferred recipe, but can…
  • Use instant mashed potatoes (if in a hurry)
  • Try sour cream instead or milk/heavy cream
  • Add baked garlic for more flavor
