Venison Sliders with Apple Aioli

A wildly delicious alternative to a basic burger.

Ingredients
  

Bacon and Slider Ingredients

  • 6 strips thick cut bacon
  • 1 pound ground venison
  • ¼ cup red onion, small dice
  • cup apple, shredded
  • 2 tbsp Worcestershire sauce
  • ¼ tsp salt
  • ½ tsp pepper

Apple Aioli

  • cup mayonnaise
  • 4 tsp apple juice concentrate frozen store variety
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg

Slider Buns and Toppings

  • 1 package slider buns
  • 8 ounce sliced Swiss cheese
  • ½ whole apple, thinly sliced
  • 8-10 leaves spinach or bibb lettuce

Instructions
 

  • Pre-heat oven to 350°
  • Render the bacon in a fry pan large enough to cook the sliders.  Remove bacon from grease and place on paper towel.  Set aside to cool.
  • In a small mixing bowl, combine the ingredients for the aioli.  Whisk until blended and refrigerate.
  • In a larger mixing bowl, combine the ingredients for the sliders and gently form into 9 or 12 patties.
  • Cook patties in bacon grease over medium-low heat for about 4 minutes per side.
  • Top with Swiss cheese and transfer to the oven to bake for 4 minutes.  Remove from the oven and allow to cool slightly.
  • Spread each slider bun generously with apple aioli.  Place a cooked patty on top followed by an apple slice, a leaf of spinach or lettuce, and top with bun.
  • Serve with some extra aioli for dipping.
